Homemade Greek Chicken Gyros (Print Version)

# Ingredients:

→ Chicken Marinade

01 - 1.3kg (12) boneless skinless chicken thighs
02 - 1/8 cup olive oil
03 - 2 tablespoons honey Dijon mustard
04 - 6 cloves garlic, minced (or 3 large cloves)
05 - Zest of 2 lemons
06 - 1/2 tablespoon salt
07 - Dried oregano, to taste

→ Additional

08 - 1 cup water or stock (for the pan)

# Instructions:

01 - Get your oven nice and hot by preheating it to 425°F (220°C)
02 - Combine chicken thighs with olive oil, honey Dijon, minced garlic, lemon zest, salt, and oregano in a bowl. Mix thoroughly and let marinate for at least an hour (overnight for best results)
03 - Thread marinated chicken thighs onto the vertical spit, alternating their direction for even cooking
04 - Place the spit in the oven and pour 1 cup of water or stock into the base. Cover the top chicken piece with foil to prevent burning
05 - Bake for 75-90 minutes until the chicken is fully cooked and develops a nice char on the outside while staying juicy inside
06 - Let the meat rest before slicing. Serve in pita bread, with Greek fries, tzatziki, or atop a Greek salad

# Notes:

01 - If you don't have a vertical spit, use a halved onion as a base with two wooden skewers as a DIY solution
02 - Marinating overnight will give the best flavor results
