Greek Ground Turkey Rice Bowls (Print Version)

# Ingredients:

→ Rice Base

01 - 1 cup basmati rice, rinsed
02 - 1 ½ cups chicken broth
03 - ¾ teaspoon salt, divided

→ Aromatics & Seasonings

04 - 5 tablespoons olive oil, divided
05 - 2 tablespoons lemon juice, divided (from 1 lemon)
06 - 1 tablespoon chopped fresh parsley, plus more for serving
07 - 1 tablespoon chopped fresh dill, plus more for serving
08 - 1 tablespoon + 2 teaspoons Greek seasoning, divided

→ Protein

09 - 450g ground turkey

→ Cucumber Tomato Salad

10 - 1 pint cherry tomatoes, halved
11 - 3 cocktail cucumbers, thinly sliced
12 - ½ cup thinly sliced red onion
13 - 1 tablespoon red wine vinegar
14 - 1 teaspoon honey (optional)

→ For Serving

15 - 115g crumbled feta cheese
16 - 115g pitted kalamata olives
17 - Tzatziki sauce, store-bought or homemade
18 - Hummus, store-bought or homemade

# Instructions:

01 - Heat 1 tablespoon of olive oil in a medium pot over medium heat. Add the basmati rice and cook for 1 minute, stirring constantly, until evenly coated with oil. Pour in the chicken broth and ½ teaspoon salt, increase heat to high, and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 16-18 minutes, until rice is tender and fluffy. Turn off heat and add 1 tablespoon olive oil, 1 tablespoon lemon juice, 1 tablespoon chopped parsley, and 1 tablespoon chopped dill. Mix until just combined.
02 - While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground turkey and cook, breaking apart with a spatula, for 3-4 minutes. Add 1 tablespoon Greek seasoning, another 1 tablespoon of olive oil, and ¼ teaspoon salt. Stir to combine and continue cooking for 3-4 more minutes, until the turkey is completely cooked through with no pink remaining.
03 - In a medium bowl, combine the halved cherry tomatoes, thinly sliced cucumbers, red onion, red wine vinegar, remaining 1 tablespoon lemon juice, honey (if using), 1 tablespoon olive oil, and 2 teaspoons Greek seasoning. Toss until well mixed.
04 - Divide the lemon herb rice among 4 bowls. Top each with a portion of the seasoned ground turkey, Mediterranean salad, crumbled feta cheese, kalamata olives, a dollop of tzatziki sauce, a spoonful of hummus, and a sprinkle of additional fresh parsley and dill.
