Spicy Haitian Spaghetti Recipe (Print Version)

# Ingredients:

→ Main

01 - 1 (8-ounce) package spaghetti
02 - 8 ounces spicy pork sausage, sliced (230g)

→ Vegetables & Aromatics

03 - 1/2 medium white onion, diced
04 - 1 teaspoon minced garlic
05 - 1 teaspoon minced thyme
06 - 1/2 cup green bell pepper, diced (120g)
07 - 1/2 cup red bell pepper, diced (120g)
08 - 2 medium tomatoes, chopped
09 - 1 medium habanero or scotch bonnet pepper
10 - 2 green onions, sliced

→ Sauce & Seasonings

11 - 2 tablespoons olive oil (30ml)
12 - 2 tablespoons tomato paste (30g)
13 - 1 teaspoon bouillon powder (3g)
14 - Salt and pepper to taste
15 - 1 cup reserved pasta water (236ml)

# Instructions:

01 - Boil pasta in salted water until al dente. Drain and reserve 1 cup pasta water.
02 - Heat olive oil in large skillet. Brown sliced sausage 2 minutes per side, then set aside.
03 - In same skillet, sauté onions, garlic, thyme, and bell peppers for 2-3 minutes until softened.
04 - Add tomatoes, tomato paste, scotch bonnet, bouillon, and seasonings. Add pasta water and simmer 8-10 minutes.
05 - Add pasta to sauce, stir to coat. Mix in sausage and garnish with green onions.

# Notes:

01 - Can substitute hot dogs or other sausages for pork sausage
02 - Traditional garnishes include avocado and boiled egg
