Spread a thin layer of Dijon mustard over the wide end of each triangle. Layer one slice of ham and one slice of Swiss cheese onto each.

Roll each triangle from the wide end to the tip, securing ham and cheese inside. Pinch the edges to seal.

In a small bowl, whisk the egg until thoroughly beaten.

Arrange rolled croissants on the prepared tray. Brush with melted butter and sprinkle with garlic powder, dried parsley, and black pepper.
