Arrange potato slices on lined baking sheet. Bake for 10 minutes, flip, and cook additional 5 minutes until golden brown. For buffalo version, cook 12 minutes before flipping.

For buffalo chips, allow to cool and crisp, then top with cheese and buffalo sauce. Broil briefly until cheese melts.
