Sweet Honey Pineapple Salmon (Print Version)

# Ingredients:

01 - 3 pound salmon fillet, cut in half
02 - 14 oz can pineapple tidbits or rings, cut into pieces
03 - 1 small onion, diced (optional)
04 - 3-4 fresh mint leaves, chopped for garnish

→ Marinade

05 - 1/4 cup pineapple juice
06 - 2 tablespoons melted unsalted butter
07 - 2 tablespoons sesame oil
08 - 1 tablespoon lemon juice
09 - 1 tablespoon light brown sugar
10 - 1 1/2 tablespoons honey
11 - 1-2 large garlic cloves, minced
12 - 1 teaspoon sea salt
13 - 1 teaspoon smoked paprika
14 - 1/8 teaspoon white pepper

→ Caramelized Pineapple (Optional)

15 - 2 tablespoons unsalted butter
16 - 1/2 cup light brown sugar

# Instructions:

01 - Preheat oven to 400°F. Line a large sheet pan with aluminum foil or parchment paper.
02 - Pat dry salmon and cut into two pieces. Arrange pineapple pieces on foil and place salmon on top.
03 - Combine pineapple juice, melted butter, sesame oil, lemon juice, honey, brown sugar, garlic, paprika, white pepper, and salt. Mix well.
04 - Spread marinade over salmon. Refrigerate for 15-30 minutes.
05 - Bake for 25-30 minutes or until internal temperature reaches 145°F. Cover with foil if needed to retain moisture.
06 - Let rest for 10 minutes. Garnish with fresh mint and serve.
