Classic Caramelized Onions (Print Version)

# Ingredients:

01 - 6 tablespoons (90g) unsalted butter
02 - 3 pounds (1.4kg) yellow or mixed onions, sliced 1/8 inch thick
03 - Kosher salt and freshly ground black pepper, to taste

# Instructions:

01 - In a large stainless steel sauté pan or two large skillets, melt butter over medium-high heat until foaming.
02 - Add onions and cook, stirring occasionally, until softened, about 8 minutes.
03 - Lower heat to medium-low and cook, stirring frequently, until onions become very sweet and rich golden-brown, 1 to 2 hours. Add 1 tablespoon water whenever browned bits on bottom threaten to burn, scraping up the fond.
04 - Season with salt and pepper to taste.

# Notes:

01 - Yellow onions work best, but mixing yellow, sweet (Vidalia), red onions, and shallots creates more complex flavor.
02 - Can be refrigerated in sealed container for up to one week. Rewarm before serving.
