Italian Wedding Soup (Print Version)

# Ingredients:

01 - Ground beef - 1/2 pound.
02 - Ground pork - 1/2 pound.
03 - Egg - 1.
04 - Italian breadcrumbs - 1/2 cup.
05 - Parmesan cheese - 1/4 cup.
06 - Garlic, minced - 6 cloves divided.
07 - Fresh parsley - 1/3 cup.
08 - Olive oil - 1 tablespoon.
09 - Yellow onion, diced - 1.
10 - Carrots, diced - 1 1/4 cups.
11 - Celery ribs, diced - 2.
12 - Chicken broth - 8 cups.
13 - Italian seasoning - 2 teaspoons.
14 - Acini de pepe pasta - 3/4 cup.
15 - Fresh spinach - 4-5 cups.

# Instructions:

01 - Mix ground meats, egg, breadcrumbs, cheese, garlic, parsley, salt and pepper. Form into 3/4-inch balls.
02 - Heat oil and brown meatballs in batches for 2 minutes. Set aside.
03 - Sauté onion, carrots, celery until soft. Add garlic and seasonings.
04 - Add broth and meatballs. Simmer while cooking pasta separately.
05 - Add spinach until wilted. Serve with pasta in bowls, topped with Parmesan.

# Notes:

01 - Can be made in slow cooker or Instant Pot.
02 - Cook pasta separately for best results.
03 - Can use frozen spinach instead of fresh.
