02 - 1 teaspoon pure vanilla extract

05 - 3 tablespoons brown sugar, packed
06 - A pinch of salt
07 - 1 cup all-purpose flour, sifted

→ For Cooking

08 - Neutral cooking oil for frying

# Instructions:

01 - In a large mixing bowl, thoroughly mash your ripe bananas with a fork until they're smooth but still have some texture.
02 - Blend in the brown sugar, vanilla extract, aromatic cinnamon, nutmeg, and that tiny pinch of salt. Gently sift the flour over the mixture and stir everything together until you have a well-combined, smooth batter.
03 - Pour enough oil into a 10-inch skillet to cover the bottom and heat over medium-high heat. Once the oil is shimmering hot, carefully drop spoonfuls of your banana batter into the pan. Watch for golden edges and bubbles forming on top - that's your signal to flip! Cook the other side until it's equally golden brown.
04 - Transfer your crispy fritters to a paper towel-lined plate to drain off any excess oil. Serve them up while they're still warm and delightfully crispy!

# Notes:

01 - The more spotted and ripe your bananas, the sweeter and more flavorful your fritters will be - adjust the sugar to taste
02 - These fritters are meant to be thinner and more moist than pancakes - don't expect a fluffy texture
03 - If you're using a cast iron skillet, reduce the heat to medium instead of medium-high to prevent burning
