Lemon Chicken Orzo Soup (Print Version)

# Ingredients:

01 - Celery, finely chopped - 2 stalks.
02 - Carrots, finely chopped - 2 medium.
03 - Onion, chopped - 1/2 medium.
04 - Butter - 1 tablespoon.
05 - Olive oil - 1 tablespoon.
06 - Garlic, minced - 3 cloves.
07 - Flour - 2 tablespoons.
08 - Chicken broth - 6 cups.
09 - Italian seasoning - 1/4 teaspoon.
10 - Chicken breasts - 1.5 pounds.
11 - Orzo pasta - 1 cup.
12 - Lemon juice - 1 tablespoon.
13 - Fresh parsley, chopped - 1 tablespoon.

# Instructions:

01 - Sauté celery, carrots, onions in butter and oil 5-7 minutes.
02 - Stir in garlic for 30 seconds, then flour for 1 minute.
03 - Add broth, seasoning and chicken. Boil then simmer covered 15 minutes.
04 - Add orzo, cook uncovered 10 minutes, stirring often.
05 - Shred chicken, return to pot. Add lemon and parsley. Season to taste.

# Notes:

01 - Can use chicken thighs instead.
02 - Chicken done at 165°F.
03 - May need extra broth for leftovers.
