Zesty Lemon Ginger Chicken Salsa (Print Version)

# Ingredients:

→ Lemon Ginger Chicken

01 - 4 boneless, skinless chicken breasts
02 - 60 ml fresh lemon juice
03 - 2 tablespoons fresh ginger, grated
04 - 3 cloves garlic, minced
05 - 1 tablespoon honey
06 - 1 tablespoon soy sauce
07 - 2 tablespoons olive oil
08 - 1 teaspoon salt
09 - 0.5 teaspoon ground black pepper
10 - 0.5 teaspoon red pepper flakes (optional)

→ Pineapple Mango Salsa

11 - 1 cup fresh pineapple, diced
12 - 1 cup ripe mango, diced
13 - 0.25 red onion, finely chopped
14 - 0.25 cup fresh cilantro, chopped
15 - 1 jalapeño, seeded and minced (optional)
16 - juice of 1 lime
17 - salt, to taste

# Instructions:

01 - In a mixing bowl, whisk together fresh lemon juice, grated ginger, minced garlic, honey, soy sauce, olive oil, salt, black pepper, and red pepper flakes. Submerge chicken breasts in the marinade, ensuring complete coverage. Cover and refrigerate for at least 30 minutes or up to 2 hours.
02 - In a separate bowl, combine diced pineapple, mango, chopped red onion, cilantro, and minced jalapeño. Add lime juice and season with salt. Mix gently and set aside to allow flavours to develop.
03 - Preheat grill or grill pan to medium-high heat. Remove chicken from marinade and place on the grill. Cook for 6 to 7 minutes per side, or until internal temperature reaches 74°C and juices run clear.
04 - Transfer cooked chicken to a plate and let rest for 5 minutes to retain juices before slicing.
05 - Arrange sliced chicken on serving plates and top each portion with pineapple mango salsa. Garnish with additional cilantro or lime wedges as desired.

01 - Marinating chicken longer enhances tenderness and flavour.
02 - For extra spice, retain some jalapeño seeds or add more red pepper flakes.
