Low Carb Ham Cheese Frittata (Print Version)

# Ingredients:

01 - 1 tablespoon salted butter
02 - 3/4 cup yellow onion, diced (1 yellow onion)
03 - 12 large eggs
04 - 1/4 cup whole milk
05 - 1/4 teaspoon salt
06 - 1/4 teaspoon black pepper
07 - 1 cup shredded cheddar cheese
08 - 1 cup diced ham
09 - Fresh chives or parsley for topping

# Instructions:

01 - Preheat the oven to 425˚F.
02 - Heat butter in a large skillet over medium heat. Add onions and sauté for 5-7 minutes, stirring occasionally, until softened. Add in ham and cook for a few minutes.
03 - In a large mixing bowl, whisk together eggs, milk, salt and pepper. Stir in cheese (can reserve 1/4 cup for topping if desired).
04 - Turn the skillet to medium-low. Pour the egg mixture into the skillet and stir well to distribute all of the ingredients. Cook over medium heat (without stirring) for about 1 minute, until the edges start to set.
05 - Transfer the skillet to the oven and bake for 10-12 minutes, until the center is set. Remove from the oven and let cool slightly before slicing.
