Marry Me Sausage Soup (Print Version)

# Ingredients:

01 - 1 tablespoon extra virgin olive oil or avocado oil.
02 - 1 pound Italian sausage.
03 - ¼ cup white wine (optional).
04 - ½ cup diced onions.
05 - 2 ribs celery, diced.
06 - 2 whole roasted red peppers, chopped.
07 - ⅓ cup chopped sun dried tomatoes in oil.
08 - 3 cloves garlic, minced.
09 - 2 teaspoons Italian herb blend.
10 - 2 tablespoons all-purpose flour.
11 - 3 cups low-sodium chicken broth.
12 - ½ cup half and half.
13 - ½ cup dried orzo.
14 - 1 cup shredded parmesan cheese.
15 - ⅓ cup spinach, sliced thinly.
16 - ¼ cup fresh Italian parsley, chopped.

# Instructions:

01 - Heat oil in Dutch oven, cook sausage 10-12 minutes until browned, breaking into chunks.
02 - Add wine or broth to pot, scrape up browned bits.
03 - Sauté onions, celery, peppers, and sun dried tomatoes until soft.
04 - Add garlic, herbs, and flour to vegetables, stir until thick.
05 - Gradually incorporate broth and some half and half.
06 - Add orzo and sausage, simmer 10-12 minutes, stirring frequently.
07 - Turn off heat, add remaining half and half, cheese, spinach, and parsley. Rest 10 minutes.

# Notes:

01 - Stir orzo frequently to prevent sticking.
02 - Can use dried tomatoes rehydrated in water.
03 - Soup will thicken as it rests.
