01 - Large eggs (6)
02 - Tortilla chips, crushed (1 cup)
03 - Mexican cheese blend, shredded (1 cup)
04 - Flour tortillas, warmed (5-6)

→ Vegetables and Aromatics

05 - Fresh onions, chopped (½ cup)
06 - Jalapeños, deseeded and minced (1-2)
07 - Fresh cilantro, chopped (2 tablespoons)
08 - Cooking oil (2 tablespoons)
09 - Salt and black pepper to taste

→ Toppings

10 - Ripe avocados, sliced
11 - Pickled onions
12 - Red salsa or hot sauce

# Instructions:

01 - Heat oil in a nonstick skillet over medium heat. Add chopped onions and minced jalapeños, cooking for 2-3 minutes until they become soft and translucent.
02 - Season beaten eggs with salt and pepper. Reduce heat to low and pour eggs into the pan. Gently push them around with a silicone spatula every 5-7 seconds until halfway set. Fold in the crushed tortilla chips, followed by cheese. Finish with cilantro, turn off heat, and cover to melt the cheese.
03 - Fill warm tortillas with the egg mixture. Top with sliced avocados, pickled onions, and your choice of salsa or hot sauce.
