Nigerian Gizdodo (Gizzard Plantain) (Print Version)

# Ingredients:

→ Gizzard Boiling

01 - 2 pounds chicken gizzard, washed
02 - 1 teaspoon salt
03 - 1/2 teaspoon seasoning powder or bouillon
04 - 1/4 teaspoon curry powder
05 - 1/4 onion, sliced or 1 tablespoon onion powder

→ Main Ingredients

06 - 1 ripe plantain, cut into square chunks
07 - 2 medium tomatoes
08 - 3 large red bell peppers (blend 2, dice 1)
09 - 4 garlic cloves, minced
10 - 2 habanero peppers, or to taste
11 - 1 large onion

→ Seasonings

12 - 1/2 teaspoon curry powder
13 - 1 teaspoon salt
14 - 1/4 teaspoon black pepper (optional)
15 - 1 teaspoon seasoning powder
16 - 2 sprigs thyme
17 - Fresh herbs (basil, leeks, or celery) for garnish

# Instructions:

01 - Season gizzards with salt, bouillon, curry powder and onion. Add water and boil for 20 minutes until tender
02 - Blend 2 red bell peppers, onion, and tomatoes coarsely in a food processor
03 - Deep fry plantains until golden brown. Quickly fry boiled gizzards for 30-60 seconds
04 - Cook blended mixture until reduced, then add seasonings
05 - Add fried plantains, gizzards, diced peppers and herbs. Stir-fry for 2 minutes until well coated
