Pineapple Chicken (Print Version)

# Ingredients:

01 - 1 pound boneless, skinless chicken breasts, cut into cubes.
02 - 1 cup pineapple chunks.
03 - 1/2 cup pineapple juice.
04 - 1/3 cup soy sauce.
05 - 2 tablespoons brown sugar.
06 - 1 tablespoon cornstarch.
07 - 1 tablespoon olive oil.
08 - Salt and pepper to taste.
09 - Green onions for garnish (optional).
10 - Sesame seeds for garnish (optional).

# Instructions:

01 - Heat olive oil in large skillet over medium heat.
02 - Season chicken with salt and pepper, cook until browned and done.
03 - Combine pineapple juice, soy sauce, and brown sugar in skillet, bring to simmer.
04 - Add cornstarch slurry and stir until sauce thickens.
05 - Add chicken and pineapple chunks, toss to coat in sauce.
06 - Simmer 2-3 minutes until heated through, garnish and serve over rice.

# Notes:

01 - Can marinate chicken for 30 minutes before cooking.
02 - Works well with canned or fresh pineapple.
