Pink Velvet Oreo Cheesecake (Print Version)

# Ingredients:

→ For the Oreo Crust

01 - 24 Oreo cookies, crushed (about 2 cups of crumbs)
02 - 1/4 cup unsalted butter, melted
03 - 1 tablespoon granulated sugar

→ For the Pink Velvet Filling

04 - 3 (8 oz) packages cream cheese, softened
05 - 1 cup granulated sugar
06 - 3 large eggs
07 - 1 teaspoon vanilla extract
08 - 1/2 cup sour cream
09 - 1 tablespoon all-purpose flour
10 - 1 tablespoon pink food coloring
11 - 1/2 cup heavy cream

# Instructions:

01 - Preheat oven to 325°F. Combine crushed Oreos, melted butter, and sugar. Press into 9-inch springform pan and bake for 10 minutes. Let cool.
02 - Beat cream cheese until smooth, then add sugar and beat until fluffy. Add eggs one at a time, then mix in vanilla, sour cream, and flour. Stir in pink food coloring.
03 - Pour filling onto cooled crust and smooth top. Tap pan to remove air bubbles. Bake 50-60 minutes until edges are set and center slightly jiggles.
04 - Turn off oven and leave cheesecake inside for 1 hour. Cool at room temperature for 30 minutes, then refrigerate at least 3 hours or overnight.
