Homemade Roasted Tomato Basil Soup (Print Version)

# Ingredients:

01 - Roma or plum tomatoes, halved - 3 pounds.
02 - Garlic cloves, peeled - 8.
03 - Olive oil - 3.5 tablespoons divided.
04 - Yellow onions, sliced - 2.
05 - Fresh basil leaves - 1/2 cup.
06 - Dried oregano - 1/2 teaspoon.
07 - Vegetable broth - 1-2 cups.
08 - Salt and pepper to taste.

# Instructions:

01 - Roast tomatoes and garlic with oil, salt and pepper at 400°F for 40-45 minutes.
02 - Cook sliced onions in oil over medium heat, stirring occasionally until golden, about 20 minutes.
03 - Blend roasted tomatoes, garlic, basil and onions until smooth.
04 - Add oregano and broth. Simmer 10 minutes. Add optional cream, milk, cheese or butter if desired.

# Notes:

01 - Can be made vegan with coconut milk.
02 - Straining seeds optional.
03 - Freezes well up to 3 months.
