Get your electric whisk going and beat that egg white until you've got soft, fluffy peaks.

In another bowl, mix your egg yolk with the flour, baking powder, and sugar. Pour in the milk bit by bit, whisking until you've got a smooth paste. Then gently fold in those fluffy egg whites you made earlier.

Heat up some oil in your non-stick pan over medium heat. Pour in a quarter of your batter and let it cook for 2-3 minutes each side until you see those nice golden edges. Keep going until you've got four pancakes, and pop them in a warm oven to stay toasty.

Crank up the heat and add a bit more oil to your pan. Split your beef into two balls, drop one in, and smash it down flat with your spatula. Let it get nice and crispy for 2-3 minutes, flip it, top with cheese, and give it another minute or two.

Time to build your burger pancakes! Start with a pancake, add your cheesy patty, drizzle with burger sauce, layer on some gherkins, and top with another pancake. Repeat for your second burger.
