Quick Spicy Chicken and Peppers (Print Version)

# Ingredients:

→ Main

01 - 2 large boneless chicken breasts or 4-5 thighs, cut into bite-sized pieces
02 - 2 small bell peppers (red, yellow or orange), cut into 1-inch pieces
03 - 3 green onions, white and green parts separated
04 - Cooking oil as needed

→ Sauce

05 - 1/4 cup ketchup
06 - 1-2 tablespoons chili garlic sauce
07 - 2 tablespoons tomato paste
08 - 2 tablespoons low-sodium soy sauce
09 - 1 tablespoon white vinegar
10 - 1 tablespoon brown sugar

→ Additional

11 - 3/4 cup chicken broth
12 - 2 tablespoons cornstarch mixed with 2 tablespoons cold water
13 - Salt and freshly ground pepper to taste

# Instructions:

01 - Cut bell peppers into 1-inch pieces and separate white and green parts of onions
02 - Combine all sauce ingredients in a bowl, adjusting chili garlic sauce to desired spiciness
03 - Heat oil and cook chicken until no longer pink, then add sauce and cook for 1 minute
04 - Add broth, peppers, and white parts of onions. Cover and simmer 5-6 minutes until peppers are tender
05 - Add most of green onions, season to taste, then thicken with cornstarch slurry. Garnish with remaining green onions
