# Ingredients:

→ Base

01 - Corn kernels - fresh, frozen, or canned (2 cups)

→ Creamy Sauce

02 - Mayonnaise (¼ cup)
03 - Sour cream (¼ cup)
04 - Fresh lime juice (1 tablespoon)

→ Seasonings

05 - Chili powder (1 teaspoon, or to taste)
06 - Smoked paprika (½ teaspoon)
07 - Ground cumin (½ teaspoon)
08 - Cayenne pepper (¼ teaspoon, optional)
09 - Salt and black pepper to taste

→ Toppings

10 - Queso fresco or cotija cheese, crumbled (½ cup)
11 - Fresh cilantro, finely chopped (1 tablespoon)
12 - Red onion, finely diced (½ small, optional)
13 - Fresh jalapeño, finely chopped (1, optional)
14 - Hot sauce (1 tablespoon, optional)

# Instructions:

01 - If using fresh corn, cut kernels from cob. For frozen, thaw and drain. For canned, drain and rinse thoroughly.
02 - Whisk together mayonnaise, sour cream, lime juice, and all seasonings in a medium bowl until smooth and well combined.
03 - Add prepared corn to the spicy sauce mixture and toss until evenly coated.
04 - Top with crumbled cheese, fresh cilantro, diced red onion, and chopped jalapeño if using. Finish with optional hot sauce.
