Nigerian Peppered Gizzard (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1.5 pounds chicken gizzard
02 - 1 red bell pepper
03 - 1 habanero pepper (or 1/2 for less heat)
04 - 1 cup onions, chopped
05 - Olive oil for cooking

→ Seasonings

06 - 1 teaspoon bouillon powder
07 - 1/2 teaspoon dried thyme
08 - 1/2 teaspoon black pepper
09 - 1/4 teaspoon cayenne pepper (optional)
10 - 1/2 teaspoon salt, or to taste
11 - Scallions for garnish (optional)

# Instructions:

01 - Wash gizzards and boil for 15 minutes with salt and black pepper
02 - Blend red bell pepper and habanero coarsely. Chop onions and scallions
03 - Drain boiled gizzards, then fry in hot oil until crispy
04 - Sauté onions in 1/2 cup oil, add blended peppers and spices
05 - Combine fried gizzards with sauce, simmer 10 minutes, garnish with scallions

01 - Can be frozen after preparation or in portions
02 - Recipe is spicy but heat can be adjusted
