Spicy Shrimp Vegetable Stir-Fry (Print Version)

# Ingredients:

01 - 1 1/2 cups broccoli florets, chopped into bite-sized pieces
02 - ½ red bell pepper, sliced
03 - 1 cup green beans
04 - 250g shrimp, peeled and deveined
05 - 3 garlic cloves, minced
06 - 1 tbsp grated ginger
07 - 2 scallions, chopped
08 - 1 tbsp olive oil
09 - 1 tbsp tamari sauce
10 - 1 tsp crushed red pepper flakes

# Instructions:

01 - Chop the vegetables, mince garlic and grate the ginger, prepare all other ingredients so everything is ready before cooking.
02 - Stir-fry the broccoli and green beans in olive oil over medium-high heat. Cover briefly for 1-2 minutes to help the broccoli cook and if using frozen green beans. Don't cover longer to prevent vegetables from becoming mushy.
03 - Add the red pepper and stir-fry for 3-4 more minutes until slightly softened.
04 - Stir in the tamari sauce to coat vegetables. Add the shrimp and stir-fry for 2-3 minutes.
05 - Add the minced garlic, ginger, red pepper flakes and scallions. Continue stir-frying for another 2-3 minutes until shrimp turn pink and broccoli is tender-crisp.
06 - Serve immediately while hot.

# Notes:

01 - A pointed red pepper (not spicy) was used in the original recipe, but regular bell pepper works well too.
