Spicy Jalapeño Smash Burger (Print Version)

# Ingredients:

→ Burger Patties

01 - 1½ pounds grass-fed ground beef or turkey
02 - 1½ teaspoons kosher salt
03 - 1½ teaspoons smoked paprika
04 - 6 slices pepper jack cheese, cut into 3-4 pieces each (optional)

→ Caramelized Vegetables

05 - 1 tablespoon avocado oil or butter
06 - 3 medium sweet onions, sliced thinly
07 - 2-3 large jalapeño peppers, sliced thinly

→ Chipotle Mayo

08 - ⅔ cup avocado oil mayonnaise
09 - 1-2 tablespoons chopped chipotles in adobo sauce
10 - Pinch of salt

→ For Serving

11 - 6 burger buns of choice

# Instructions:

01 - Heat a large cast iron skillet over medium-high heat. Add oil, onions, and jalapeños. Once colored, reduce heat and cook 15-20 minutes until deeply golden brown.
02 - Mix ground meat with salt and smoked paprika. Form into 6 patties. If using cheese, stuff pieces into each patty. Set aside.
03 - Mix mayonnaise with chopped chipotles and salt in a small bowl. Adjust spiciness to taste.
04 - Divide onions and jalapeños into piles. Place patties on top and smash very flat. Cook 2-3 minutes until edges brown, then flip everything together. Cook another 3-4 minutes until done.
05 - Build burgers on buns with the patty-vegetable mixture and chipotle mayo.

01 - Remove jalapeño seeds and membranes for less heat
02 - Pre-chopped chipotles can be found in Latin food aisles
03 - Can add cheese slices on top instead of inside patties
