Loaded Potato Soup (Print Version)

# Ingredients:

01 - 4 large russet potatoes, diced.
02 - 8 slices bacon, cooked and crumbled.
03 - 2 1/2 cups chicken stock.
04 - 1 cup cold water.
05 - 3/4 cup shredded cheddar cheese.
06 - 3/4 cup heavy whipping cream.
07 - 1/2 cup butter.
08 - 1/3 cup all-purpose flour.
09 - 1/4 cup diced green onions.
10 - 1/2 yellow onion, diced (optional).
11 - 1/2 teaspoon salt.
12 - 1/2 teaspoon black pepper.

# Instructions:

01 - Cut potatoes into small pieces and boil until you can easily stick a fork in them. Drain and set aside.
02 - Put chicken stock, water, onion, salt and pepper in a pot. Let it simmer for 20 minutes.
03 - Melt butter in a pan and stir in flour. Cook for 2 minutes while stirring.
04 - Whisk the butter-flour mix into the broth. Add cream and simmer 20 minutes until thick.
05 - Add the cooked potatoes and stir well.
06 - Top each bowl with cheese, bacon pieces, and green onions.

01 - Cook onions first for more flavor.
02 - Use freshly grated cheese.
03 - Great for cold weather.
