Add oats, milk, water, sweetener, salt, and vanilla to a medium/large heavy-bottomed pot. Bring to a boil, then cook for 10 minutes, stirring frequently to prevent burning, until oats are soft and most of the liquid is absorbed.

While the oatmeal is cooking, wash, dry, and remove the tops of the strawberries. Blend 1/3 of the strawberries into a puree, cut 1/3 into chunks, and slice the remaining 1/3 for topping.

When the oatmeal is done, add the heavy cream or coconut oil (if using), strawberry puree, and chopped strawberries. Stir to combine. Do not bring back to boil to preserve freshness unless planning to serve the next day.

Pour the oatmeal into bowls and top with the remaining sliced strawberries. Serve and enjoy.
