Sweet Potato Casserole (Print Version)

# Ingredients:

01 - 4 pounds sweet potatoes.
02 - ½ cup butter.
03 - ¼ cup light brown sugar.
04 - 2 - 2½ teaspoons salt.
05 - 1 teaspoon ground cinnamon.
06 - 1 teaspoon vanilla extract.
07 - ¾ cup chopped pecans.
08 - 3 cups mini marshmallows.

# Instructions:

01 - Bake sweet potatoes at 450°F for 1 hour until very tender.
02 - Lower oven to 350°F.
03 - Peel potatoes and place in large bowl.
04 - Add butter, brown sugar, salt, cinnamon, and vanilla. Beat with electric mixer until smooth.
05 - Spread into 9x13 baking dish.
06 - Top with pecans and marshmallows.
07 - Bake for 20-25 minutes until marshmallows are golden.

02 - Can make sweet potatoes ahead and store in fridge for up to 3 days.
03 - Marshmallow size can vary, and nuts can be swapped or skipped.
