Sweet Potato Honey Bun Cake (Print Version)

# Ingredients:

01 - 1½ cup mashed sweet potato.
02 - 15.25 oz yellow cake mix.
03 - 4 ounces cream cheese, softened.
04 - ¾ cup vegetable oil.
05 - 4 large eggs, room temperature.
06 - 1 tablespoon vanilla extract.
07 - ½ cup light brown sugar, packed.
08 - ¾ teaspoon ground cinnamon.
09 - 1 teaspoon ground ginger.
10 - ¼ teaspoon ground nutmeg.
11 - 1¼ cup confectioners' sugar.
12 - 3 tablespoons milk.
13 - 1 tablespoon pure maple syrup.

# Instructions:

01 - Preheat oven to 350F with rack in middle. Spray 9x13 pan with nonstick spray. Mix spice swirl ingredients in small bowl.
02 - Mix cake mix, sweet potato, cream cheese, oil, eggs, and vanilla in stand mixer with whisk for 1 minute until combined.
03 - Pour half batter in pan, add spice mixture, then remaining batter. Swirl gently with knife without fully mixing.
04 - Bake 27-29 minutes until golden and pulling from sides. Cool 30 minutes in pan.
05 - Mix confectioners' sugar, milk, and maple syrup for icing. Spread on cooled cake. Let set 10 minutes before cutting.

01 - Makes 24 2x2 cake slices.
02 - Can use canned sweet potatoes.
03 - Cream cheese must be softened.
