Tater Tot Cups (Print Version)

# Ingredients:

01 - 1 bag (16 oz) frozen tater tots (48-60 pieces).
02 - 3/4 cup freshly shredded cheddar cheese.
03 - 1/2 cup sour cream.
04 - 4 strips bacon, cooked and crumbled.
05 - 2 green onions, sliced (green parts only).

# Instructions:

01 - Heat oven to 450°F and spray your muffin pan with cooking spray.
02 - Put 2-3 tots in each mini muffin cup, or 4-5 tots for regular size cups.
03 - Place pan on bottom rack and bake 10 minutes until tots start to soften.
04 - Press tots with a greased shot glass using a twisting motion to create potato cups.
05 - Return to oven for 15 minutes until cups are deep golden brown.
06 - Fill each cup with cheese and bake 4-5 minutes until melted.
07 - Let cool 5 minutes, then top with sour cream, bacon, and green onions.

# Notes:

01 - Can be made ahead and reheated at 400°F for 10 minutes.
02 - Store leftovers in fridge up to 5 days.
03 - Reheat at 350°F for 10 minutes until crispy.
