Yellow Basmati Rice with Cashews (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil
02 - ½ medium yellow onion, finely diced
03 - 1 cup basmati rice, rinsed and drained
04 - ½ teaspoon curry powder
05 - 1 teaspoon turmeric
06 - ½ teaspoon kosher salt
07 - 1 ¾ cups vegetable or chicken broth
08 - ½ cup golden or sultana raisins
09 - ½ cup roasted unsalted cashews, coarsely chopped
10 - 2 tablespoons chopped cilantro or parsley (optional)

# Instructions:

01 - In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and cook until soft, about 3-4 minutes.
02 - Add the basmati rice, curry powder, turmeric, and salt. Toast the rice for about 1-2 minutes, stirring frequently.
03 - Stir in the broth and raisins. Bring to a boil, reduce to a simmer, cover, and cook for 15 minutes until the rice is tender and the liquid is absorbed.
04 - Let the rice stand for 5 minutes. Add the cashews and optional cilantro or parsley. Stir with a fork to combine before serving.
