Zesty Lime Coconut Rice (Print Version)

# Ingredients:

01 - 200 g jasmine rice
02 - 400 ml coconut milk
03 - 240 ml water
04 - Grated zest of 1 lime
05 - Juice of 1 lime
06 - 2 tablespoons brown sugar
07 - 1 teaspoon salt
08 - 15 g chopped fresh cilantro
09 - 15 g toasted unsweetened coconut flakes
10 - Lime wedges, for garnish (optional)

# Instructions:

01 - Place the jasmine rice in a fine sieve and rinse under cold running water until the water runs clear to remove excess starch.
02 - In a medium saucepan, whisk together coconut milk, water, lime zest, lime juice, brown sugar, and salt until the sugar and salt are fully dissolved.
03 - Add the rinsed rice to the saucepan. Bring the mixture to a gentle boil over medium-high heat, then reduce heat to low. Cover tightly and simmer for 15–20 minutes until the liquid is absorbed and the rice is tender.
04 - Take the saucepan off the heat and let it stand, covered, for 5 minutes. Uncover and fluff the rice gently with a fork.
05 - Gently fold in the chopped cilantro and toasted coconut flakes until evenly combined.
06 - Transfer the lime and coconut rice to a serving bowl. Garnish with lime wedges and an extra sprinkle of coconut flakes if desired.

# Notes:

01 - For maximum aroma, zest the lime immediately before adding it to the saucepan.
