Baked Feta Eggs (Print Version)

# Ingredients:

01 - 2 cups cherry or grape tomatoes.
02 - 1 red bell pepper, diced.
03 - ½ small red onion, diced.
04 - 3 cloves garlic, minced.
05 - 8 ounces feta cheese.
06 - 4 tablespoons olive oil.
07 - 1 teaspoon dried oregano.
08 - 1 teaspoon sea salt.
09 - ½ teaspoon dried thyme.
10 - ½ teaspoon ground black pepper.
11 - ½ teaspoon red pepper flakes.
12 - 1 cup baby spinach, chopped.
13 - 4 large eggs.
14 - Fresh basil or chives for garnish (optional).

# Instructions:

01 - Heat oven to 400°F.
02 - Divide vegetables and feta between ramekins or place in single baking dish, drizzle with olive oil.
03 - Mix herbs and spices, sprinkle over vegetables and feta.
04 - Bake for 25 minutes until vegetables are soft and feta begins to melt.
05 - Remove from oven, stir to combine feta with vegetables, add spinach.
06 - Make wells in mixture, crack eggs into wells.
07 - Return to oven for 10 minutes until eggs are set but yolks still soft.

# Notes:

01 - Use 10-ounce ramekins or 8x8/9x11 baking dish.
02 - Best served immediately with crusty bread.
