Beef Broccoli Lomein (Print Version)

# Ingredients:

01 - Tender flank or sirloin steak, thinly sliced - 1 pound.
02 - Fresh broccoli florets - 16 ounces.
03 - Chinese egg noodles - 16 ounces.
04 - Fresh ginger root, minced - 1/8 cup.
05 - Fresh garlic, minced - 1/8 cup.
06 - Sweet onion, diced - 1/4 cup.
07 - Dark soy sauce - 3/4 cup.
08 - Rich oyster sauce - 1/2 cup.
09 - Golden honey - 1/2 cup.
10 - Rice vinegar - 1/8 cup plus 1 tablespoon.
11 - Toasted sesame oil - 2 tablespoons.
12 - Cornstarch - 3 tablespoons total.
13 - Water for cornstarch slurry - 2 tablespoons.
14 - Browning sauce - 1 tablespoon (optional).

# Instructions:

01 - Boil noodles in plenty of water until tender but still chewy. Drain well and toss with a touch of oil to prevent sticking.
02 - In a bowl, blend dark soy sauce, honey, and oyster sauce. Stir in rice vinegar. Mix 2 tablespoons each of cornstarch and water, add to sauce.
03 - Coat sliced beef with 1 tablespoon cornstarch, soy sauce, a splash of vinegar, and ginger. Let sit while preparing other ingredients.
04 - Heat wok until smoking. Add sesame oil and quickly sear beef until browned. Remove and set aside.
05 - In the same wok, cook onion, garlic, and ginger until fragrant. Add broccoli and stir-fry until bright green.
06 - Add noodles to vegetables, pour sauce over while stirring. Return beef to wok and toss everything until hot and well coated.

# Notes:

01 - For best results, slice beef against the grain when cold.
02 - Regular spaghetti can replace lomein noodles.
03 - Browning sauce adds color but isn't essential.
