Steam or boil your broccoli until it's tender but not mushy - about 3 minutes in the microwave steamer. Then use a potato masher to gently squish it down, not completely mashed but just enough to flatten.

Mix together your yoghurt, lemon juice, salt, and pepper for the sauce. Set aside.

Lightly beat the egg, then mix in flour, parmesan, garlic, milk, salt, and pepper. Add your squished broccoli and stir to combine evenly.

Heat oil in a pan over medium heat. Drop 1/4 cup portions of the mixture and flatten to about 1cm thick. Cook 3 at a time for 2-3 minutes each side until golden brown.

Serve your fritters hot with the yoghurt sauce and lemon wedges if you like.
