Grated Egg Avocado Toast (Print Version)

# Ingredients:

01 - 2 large eggs.
02 - 2 slices sourdough bread.
03 - 1 tablespoon unsalted butter.
04 - 1 ripe avocado, sliced or mashed.
05 - Kosher salt to taste.
06 - Black pepper to taste.
07 - Red pepper flakes (optional).
08 - Everything but the bagel seasoning (optional).
09 - Furikake seasoning (optional).

# Instructions:

01 - Boil eggs for 10 minutes, then chill in ice bath for 2 minutes.
02 - Peel cooled eggs and set aside.
03 - Toast bread slices and spread with butter.
04 - Top bread with sliced or mashed avocado, season with salt.
05 - Using a Microplane and cut-resistant glove, grate eggs over toast.
06 - Add preferred seasonings and serve immediately.

# Notes:

01 - Eggs can be boiled day before.
02 - Use cut-resistant glove for safety when grating.
