Fresh Homemade Shrimp Burgers (Print Version)

# Ingredients:

→ Burger Patties

01 - 1½ pounds large shrimp (26-30 per pound), peeled and deveined
02 - 1 cup panko bread crumbs
03 - 2 tablespoons mayonnaise
04 - ½ teaspoon salt
05 - ¼ teaspoon black pepper
06 - ⅛ teaspoon cayenne pepper
07 - 3 scallions, finely chopped
08 - 3 tablespoons vegetable oil

→ Assembly

09 - 1 cup tartar sauce
10 - 4 hamburger buns
11 - 4 leaves Bibb lettuce

# Instructions:

01 - Pulse panko in food processor until finely ground (about 15 pulses) and transfer to a shallow dish.
02 - Process one-third of shrimp with mayonnaise and seasonings until finely chopped. Add remaining shrimp and pulse until coarsely chopped. Mix in scallions.
03 - Divide mixture into 4 portions and shape into ¾-inch-thick patties. Coat each patty in ground panko, pressing gently to adhere.
04 - Heat oil in nonstick skillet over medium heat. Cook patties until golden brown and 140°F internal temperature, 3-5 minutes per side.
05 - Drain patties on paper towels. Spread tartar sauce on buns, add lettuce and burgers, then serve.

# Notes:

01 - Can be made ahead and frozen for up to 3 months
02 - Thaw frozen patties overnight in refrigerator
03 - Internal temperature should reach 140°F
