Maple Cinnamon Roasted Sweet Potatoes (Print Version)

# Ingredients:

01 - 2 lb sweet potatoes, diced into 1" cubes.
02 - ¼ cup maple syrup.
03 - 2 tablespoons olive oil.
04 - ¾ teaspoon cinnamon.
05 - 1 teaspoon sea salt.

# Instructions:

01 - Position rack in center and heat oven to 425°F. Line baking sheet with parchment paper.
02 - Whisk together maple syrup, olive oil, and cinnamon until well combined.
03 - Toss sweet potatoes with maple mixture in mixing bowl until evenly coated.
04 - Spread potatoes on baking sheet without overlapping. Season with salt. Roast 30-40 minutes, flipping every 10-15 minutes, until golden and crisp outside, tender inside.

01 - Keep potatoes from touching for best browning.
02 - Best reheated in skillet, not microwave.
