Preheat oven to 175°C (350°F) and line a baking sheet with parchment or silicone mat.

In a bowl, combine peanut butter, sugar, egg, and vanilla. Mix until smooth and thick.

Roll tablespoon-sized dough into balls. Place on baking sheet, 5 cm apart. Flatten with a fork in a crisscross pattern.

Bake for 8–10 minutes until edges are set. Centers may appear soft but will firm up as they cool.

Let cool 5 minutes on the sheet, then transfer to a wire rack.
