In a large bowl, whisk together eggs, milk, salt, and black pepper until fully combined.

Melt 1 tablespoon butter in a non-stick skillet over medium heat. Pour in the egg mixture and scramble gently until just set, approximately 3–4 minutes. Remove from heat, stir in crumbled sausage and shredded cheddar cheese until cheese is melted. Set aside.

Heat a separate skillet over low heat. Warm each flour tortilla for 30 seconds per side until pliable.

Divide the sausage, egg, and cheese mixture evenly among the tortillas. Spoon the filling onto the center of each tortilla.

Roll each tortilla tightly, folding in the sides to encase the filling and create sealed roll-ups. Position seam-side down.

Melt remaining tablespoon butter in a skillet over medium heat. Place roll-ups seam-side down in the skillet and cook until golden brown on all sides, approximately 2–3 minutes per side.

Allow roll-ups to cool slightly. Slice in half and garnish with freshly chopped chives or parsley if desired.
